The Food Team carries out a programme of microbiological food sampling of food on sale or produced in the district. Such sampling may be for surveillance purposes, or to support particular food hygiene initiatives, but is mainly a means of providing direct evidence of the effectiveness of food business hazard controls.
The Food Team also participates in food sampling programmes on a county-wide basis; each local authority in Norfolk undertakes sampling of pre-agreed foodstuffs. This enhances the value of the sampling exercise given the relatively small numbers of samples that each individual authority is able to take.
National and EEC sampling is also undertaken from time to time. Analysis is carried out by the Public Health Laboratory Service. Feedback and remedial advice is given to food businesses where samples do not achieve the required standard.
